Why single-coated paper soaks through and tears
A single PE coat only protects the inside face. Sauce sits against that barrier, but the paper fibres on the outside are bare. Over a few minutes, moisture migrates sideways through the fibre and reaches the unprotected back, which softens and then splits. This is the failure behind nearly every “my shawarma paper fell apart” complaint. The inside looked sealed, but the unguarded outer face was always the weak point.
How sealing both faces fixes it
A double coat lays a polyethylene film on both sides of the sheet, each layer typically 8 to 25 gsm. Sauce cannot enter from the food side and cannot escape to the hand side, because both routes are blocked. The paper core stays dry between two barriers, so it keeps its strength no matter how wet the filling. Which shawarmas actually need a double coat
Match the coat to the sauce. A double coat is built for the heavy hitters: garlic-sauce-loaded chicken shawarma, tahini-rich wraps, anything where the sauce pools rather than coats. The trade-off: barrier strength versus recycling
An honest point. The two PE layers that make this paper leak-proof also make it harder to recycle than uncoated greaseproof, since the plastic film must be separated from the fibre. For a shop where sauce control is non-negotiable, that trade is worth it.
