It handles food temperatures up to around 220 degrees Fahrenheit. It is designed for wrapping, serving and lining. It is not non-stick.
Parchment paper has a silicone coating applied to the surface. That coating makes it non-stick and heat resistant up to 450 degrees Fahrenheit. It is designed for baking and lining oven trays, lining cake tins, separating layers of pastry. If you put greaseproof paper in an oven at baking temperature, the paper degrades and sticks to food. If you use parchment paper to wrap a burger, you are paying for silicone coating you do not need.
