How Is Parchment Paper Made?
Parchment paper is made by running plain, filler-free paper through a concentrated sulfuric-acid bath, which transforms its surface, and then usually applying a silicone coating. The two stages together give the sheet its defining properties.
The core stage is parchmentizing. A pure-fibre base paper — deliberately made without the fillers or sizing found in ordinary paper — is passed through a bath of concentrated sulfuric acid (sometimes zinc chloride) under controlled time and temperature. The acid partially dissolves and gelatinises the cellulose, and when the paper is then washed thoroughly, that cellulose is regenerated as a dense, non-porous, cross-linked layer across the sheet. This natural, film-like surface is what gives genuine parchment its grease resistance, water resistance, wet strength, heat resistance, and slight translucency — without any plastic coating. Because the acid treatment can leave the sheet brittle, it is often treated with a plasticiser such as glycerine to keep it flexible.
The silicone coating
Most modern baking parchment adds a second stage: a thin silicone coating, usually water-based, applied to one or both sides. Silicone forms a cross-linked, high-density, heat-stable layer with low surface tension, which delivers the superior non-stick release cooks expect and lets a single sheet be reused across several bakes. Is Parchment Paper Safe, PFAS-Free, and Reusable?
Yes — parchment paper is food-safe, PFAS-free, and reusable in its silicone-coated form, within its stated temperature limit. Each of those points is worth understanding, because parchment is often confused with coatings it does not contain.
On safety, the silicone coating on baking parchment is generally recognised as safe by the FDA and is stable under heat, and the underlying parchmentised paper is a treated cellulose sheet, not a plastic film. On PFAS, baking parchment is coated with silicone rather than the fluorinated “forever chemicals” linked to some nonstick products, so quality parchment is PFAS-free — a meaningful point given the FDA’s 2024–25 phase-out of PFAS grease-proofers in food paper. On reusability, silicone-coated parchment can line a pan through several bakes before it needs replacing, especially at moderate temperatures.
The one firm limit is heat. Parchment is heat-resistant but not fireproof: stay within the manufacturer’s stated maximum, typically around 450°F (232°C), and never use it under a broiler, in a toaster oven near the element, or over direct flame, where it can scorch or ignite.
